Magical lunch boxes with GLAD!
A fun lunch box for girls!
Main Meal: - Carrot and fruit muffin
- Small portion Asian Noodle salad – packed in a Glad Rainbow Sandwich bag
Carrot and fruit muffins 375ml (210g) cake flour 500ml (280g) whole-wheat flour 250ml sugar 10ml bicarbonate of soda 5 ml salt 5 ml ground cinnamon 2 ml mixed spice 1 ml ground nutmeg 125 ml grated carrot 175 ml pitted dates, chopped 125 ml fruit cake mix 50 g pecan nuts, chopped 2 eggs, beaten 500ml milk 125ml cooking oil 5 ml vanilla essence - Sift the flour, sugar, bicarbonate of soda, salt and spices together.
- Add the carrot, dates, cake mix and nuts to the flour and mix through.
- Beat the eggs with the liquids. Make a well in the centre of the dry ingredients and add enough liquid to moisten the dry ingredients. Mix lightly. DO NOT OVER MIX, BATTER CAN STILL BE LUMPY.
- Line the hollows of a medium sized muffin tin with paper cups. Fill two-thirds full with batter and bake for 20 – 25 minutes or until muffins spring back when lightly pressed with the finger.
- Allow to cool to room temperature. Sprinkle with icing sugar for decoration.
- Makes 18 – 20 muffins, depending on size.
Tip: - This muffin mix can be stored in an airtight container and refrigerated for 2 – 3 weeks. Only bake the amount of muffins needed to ensure freshness.
- Baked muffins can be wrapped individually, after cooling, using Glad Style Pink or Yellow Wrap. Freeze muffins after wrapped, pack into lunch boxes straight from freezer; it will be defrosted by lunch time or tea break.
Snacks and drinks for during the day: - Frozen mineral water
- Fruit yoghurt,
- Fruit skewer
- Ready bought milkshake/ dairy fruit juice.
- Place all the snacks in different coloured Glad Rainbow sandwich bags, this will help to distinguish between the contents of the bag. Use the fun stickers to secure bags. Label each by writing the name of the contents on each sticker or write a note to your loved ones.
Tip: All meals can be interchanged according to family preferences
