Lunch box for a busy day
Pitas filled with chicken salad
1 pita bread, halved 1 chicken breast filled, cooked and roughly chopped 1 small salad pepper, seeded and sliced 2 salad onions, chopped 60 ml mayonnaise Salt and freshly ground black pepper, to taste Fresh herb salad leaves - Mix the chicken, pepper, onions and mayonnaise together. Season to taste.
- Fill the pita halves with the chicken salad and fresh herb leaves.
- Wrap with Glad Style wrap and place in a lunch box with biscuits and a fruit yoghurt of choice.

Chunky Peanutbutter and choc-chip cookies
440 ml (245 g) cake flour 5 ml baking powder 2 ml salt 125 g butter 125 ml (100g) white sugar 125 ml (100g) brown sugar 125 ml crunchy peanut butter 1 egg 125 ml (100g) chocolate chips 5 ml caramel essence 5 ml milk 2 ml bicarbonate of soda - Preheat the oven to 180°C and line baking trays with Glad Bake Paper.
- Sift the dry ingredients together.
- Cream the butter, sugar and peanut butter together. Add the egg, sifted dry ingredients, chocolate chips and essence and mix well.
- Dissolve the bicarbonate of soda in the milk and stir into the butter mixture.
- Spoon spoonfulls of dough onto the prepared trays, leaving enough space for spreading inbetween each.
- Bake for 12 – 15 minutes or until biscuits are golden.
- Remove from oven and allow to cool on a wire rack.
- Pack a few biscuits in a Glad Yummy bag for a sweet treat in a lunch box.
Makes 50 biscuits, depending on size
Tip: Store biscuits in an airtight container, with sheets of Glad Bake paper inbetween each layer, for 3 months.
