Lamb kofta with tzatziki sauce



500g lean lamb mince
½ small onion, finely chopped
5 ml crushed garlic
5 ml ground cumin
5 ml ground all spice
5 ml fresh mint, chopped
15 ml fresh parsley chopped
1 egg, beaten

To serve: Ready-bought tzatziki sauce 8 medium Rosa tomatoes 8 asparagus spears, blanched


1. For the meatballs: Mix all the ingredients together in a bowl with a fork until combined. Roll 15 ml of mixture into little balls and place on a lightly greased baking tray. Bake in a preheated oven at 180°C until golden and cooked. Allow to cool to room temperature.

2. Thread the meatballs with the Rosa tomatoes onto wooden skewers. Place one or two skewers with the asparagus spears into a Glad Rainbow Sandwich bag. Fold closed and secure with a fun sticker.
